Cold Light Salad
Serves: 8 (as salad) or 3 (as light dinner)
Cucumber | 200gms |
Tomatoes | 250 gms |
Spring Onion / Onion | 100 gms |
Yellow bellpepper | 1 |
Pastallio Pasta | 300 gms |
For Dressing | |
Olive Oil | â…“ Cup |
Red Vinegar | ¼ Cup |
Garlic Paste | 2 tbsp |
Red chilli sauce | 2 tbsp |
Salt (3tbsp), Dried Parsley (2 tbsp), Chilli Flakes (1 tbsp) | As per taste |
Method
- Slice all the vegetables and keep in fridge to cool.
- Cook the pasta as per instruction. Keep aside to cool.
- Mix together all the ingredients of the dressing in a small air-tight container and shake well. Refrigerate.
- Combine all in a large bowl (Pastallio Pasta, vegetables and dressing). Add Salt, Parsley and Chilli flakes. Mix well.
- Refrigerate.
- Serve cold.
