Three Bean Salad

Serves: 4(as Salad), 2(as Dinner)
Kidney Beans, Boiled½ Cup
Chick Peas, Boiled½ Cup
Butter Beans, Boiled¼ Cup
Spring Onions, Finely Chopped3-4 stems
Tomato, Deseeded and Cut into Small Cubes1
Mozzarella Cheese/ Cheddar Cheese, Cut into Small Cubes¼ Cup
Iceberg Lettuce, Torn into Pieces1 Cup
Pastallio Pasta100gms
Tomato Ketchup (For Dressing)1½ tbsp
Olive Oil (For Dressing)3 tbsp
Dried Oregano (For Dressing)¼ tbsp
Salt & PepperAs per Taste

Method

  • To Keep the Lettuce crisp, soak it in cold water for 10 to 15 minutes and then drain it thoroughly before using in the salad.
  • Toss all the ingredients and Pastallio Pasta except the dressing and chill the salad for 2 to 3 hours.
  • Just before serving, add the dressing. Mix well.
