Red Bell-pepper Sauce

Serves: 2 (as dinner)
Red Bellpepper3 Large
Onions, Cut2
Garlic, Cut4 Cloves
Fresh cream¼ Cup
Mixed Dried Italian Herbs1 tbsp
Pickled Jalapenos, Chopped4
Olive Oil2 tbsp
Salt & PepperAs per Taste
Cheese, grated (For Gamish)½ Cup
Pastallio Pasta (Fusilli/Shell)200g

Method

  • Cut and deseed the red bellpeppers.
  • Blanch in hot water and drain.
  • Heat olive oil in a pan and sauté the onions and garlic till the onions are translucent.
  • Combine the blanched red bellpeppers, onions and garlic in a blender and puree to a smooth sauce.
  • Add the sauce in a pan. Add the fresh cream, mixed dried herbs, jalapenos, salt and pepper. Bring to boil.
  • Add the Pastallio Pasta. Mix well.
  • Garnish with cheese. Serve immediately.
